The short answer
Switching your domain's nameservers to Vercel replaces the DNS records your registrar was serving, including the MX records that deliver your email. To fix it, add your email provider's MX and TXT records in Vercel's DNS; common providers have DNS presets that fill them in for you. Then finish the verification in your email provider's dashboard. Give it time: Google allows up to 72 hours for new MX records to be recognized.
